The Sudtirol Sauvignon Blanc 'Porphyr & Kalk' from Niedrist Winery is a bottle with a herbaceous and mineral aromatic profile that is the result of owner and winemaker Ignaz Niedrist's meticulous approach. Sauvignon Blanc has been present in Alto Adige for more than a century and reaches heights of absolute excellence here, having demonstrated perfect adaptation to the cool Alpine climate and the distinctly mineral soils of the area. In addition, the area enjoys countless hours of annual daylight and significant temperature fluctuations between day and night during the grape ripening period, prerequisites that result in optimal technological, phenolic and aromatic ripening of the grapes.
Niedrist's Sauvignon Blanc 'Porphyr & Kalk' Sudtirol is derived from only Sauvignon Blanc from vines about 25 years old, the result of massal and clonal selection. The east- and west-facing vineyards are situated at altitudes between 450 and 600 meters above sea level in the villages of Appiano Monte and Cornaiano, where the soils are limestone and porphyry with acidic moraine deposits, respectively. Harvesting is done by hand with careful selection of the grapes, which are then softly pressed for alcoholic fermentation of the must in temperature-controlled stainless steel tanks for 14 days. Malolactic fermentation is stopped and the wine matures for several months between stainless steel and 11-hectoliter acacia barrels.
Niedrist Sauvignon Blanc Sudtirol 'Porphyr & Kalk' has a straw-yellow color with brilliant greenish highlights. The nose evokes intense and pleasant aromas of citrus, tropical fruit, white flowers, herbs and flint. Balanced and juicy on the palate, endowed with vibrant fresh-sappy verve and impressive flavor persistence.
