Brunello di Montalcino La Cerbaiola Salvioni 2016

The Brunello di Montalcino of the Salvioni La Cerbaiola winery is a Tuscan wine pearl inextricably linked to the noble Ilcinese tradition. From just 4 hectares of vineyards, the estate produces only two labels: a Rosso di Montalcino and the Brunello di Montalcino, the highest wine expression of the Salvioni family. This bottle, considered a true cult wine, is produced exclusively in the vintages of exceptional quality, while in the lesser vintages the entire production is destined for Rosso di Montalcino, so as to respect the very high quality standard of Brunello every year.
Cerbaiola Salvioni Brunello di Montalcino is a pure Sangiovese Grosso made with grapes from three different plots located at an altitude between 420 and 440 metres above sea level. The vines benefit from south-east exposure and marl soil, as well as a ventilated microclimate. Grape yields per hectare are kept very low and, once ripe, the grapes are harvested by hand and transferred to the cellar, where they are mellowed in stainless steel tanks for spontaneous alcoholic fermentation accompanied by about four weeks of contact between the must and the skins, without temperature control. After racking, the mass remains in stainless steel for a few months carrying out malolactic fermentation and is then racked into large Slavonian oak casks of 18 and 22 hectolitres for ageing for approximately 36 months. Finally, following a further two years of bottle ageing, the wine is ready for release.
The Brunello di Montalcino La Cerbaiola Salvioni has an intense ruby red colour with garnet hues. The nose is a fine and complex interweaving of violet, iris, strawberry tree, cherry, eucalyptus, fennel and resin, with hints of spice and mineral touches of pumice stone. Powerful, warm and harmonious on the palate, characterised by fine freshness and silky tannins.
