The vineyards are located in the municipality of Salice Salentino, covering a total area of 1,500 hectares. The \u003cstrong\u003eclimate is hot and dry, only mitigated by sea breezes\u003c\/strong\u003e. The soils are predominantly clay and sand, resting on deep limestone substrates. After harvesting, the best clusters are destemmed and undergo pre-fermentation maceration at around 12°C. Fermentation then takes place in stainless steel tanks at controlled temperatures, with a maceration period on the skins lasting two to three weeks.
