Vinification follows a non-interventionist oenological approach, with spontaneous alcoholic fermentation in barrels and complete malolactic fermentation. After a short period of maturation, the vintage wine is topped up with 35% vin de reserve and then placed in the bottle for fermentation according to the Champenoise Method.
