Once the grapes have been selected and brought to Arcani's winemaking facilities, they are destemmed and undergo spontaneous fermentation, thanks to the presence of indigenous yeasts, in steel containers for 15-20 days. Maturation then follows, lasting 3 months on the fine lees in steel, followed by a further \u003cstrong\u003e12 months in large cement casks\u003c\/strong\u003e.\u003c\/p\u003e\r\n\u003cp\u003eThis Centesimino red wine made by Ancarani manifests itself to the eye with a hue reminiscent of ruby red, crossed by slight garnet-coloured veins, evident in the rim. The olfactory spectrum is organised around mainly floral notes, which, minute by minute, give way to more balsamic and fruity hints.
