Restless wines that can sometimes be impenetrable when young, but endowed with a unique substance that allows them to give their best after a few years. 20 hectares, located between Barolo and Barbaresco, cultivated with the utmost respect for the land and the fruit, capable of giving life to unique bottles, which once tasted become an absolute benchmark.\u003c\/p\u003e\n\u003cp\u003eThe Pajè Vecchie Viti is produced with pure Nebbiolo grapes, coming from a single vineyard of about 2 hectares located in the municipality of Barbaresco. The soils, rich in limestone marls, are the perfect habitat for vines that have an age between 50 and 60 years that produce few fruits, but of absolute quality. The harvest is done manually and the collected grapes undergo a double selection, while the alcoholic fermentation takes place in wooden vats thanks to a pied de cuve of indigenous yeasts. The maceration lasts about two and a half months, while the aging takes place \u003cstrong\u003ein large oak barrels for about 5 years\u003c\/strong\u003e.\u003c\/p\u003e\u003cp\u003eThe Vecchie Viti \"Pajè\" has a ruby dress that turns towards garnet, typical of Nebbiolo. Here it slowly unfolds, and with a phlegmatic manner, it bestows small hints of dog rose, tobacco, wilted violet while the fruit is more recognizable in a perfect ripeness of the grape rather than in usual descriptors.
